His career has spanned the genres of folk, country and pop, recording over 10 critically acclaimed albums and worked with artists such as Lyle Lovett, Nanci Griffith, Shawn Colvin and Lloyd Maines. I recently learned that Darden really has a passion about food and cooking, so we put our heads together and thought what would be better than an evening with friends cooking together in the kitchen, great food and live music! We’ll take our usual 12 Hands on Cooks, along with 12 Spectators, who can watch the activities in the kitchen, join us for our wonderful meal and enjoy the live concert!

These wildly popular field trips are a blast! Get on the bus! Tour the Hill Country with us. We can make stops at local Farmer’s Markets, Goat Cheese Farms, Lavender Farms and Shops. Olive Orchards, Wineries and more! Our main objective is to forage for our evening “Random Acts of Cooking” class! At the end of the excursion, students will return to the kitchen to craft a menu from the items we have randomly selected during the day. This class is a lot of fun and helps you to learn how to cook more spontaneously, taking the season and availability of your local foods into consideration. Lodging may be available separately. Olive Harvesting at Bella Vista Ranch with Traditional Italian Style Farm Hand Feast

Come and experience a true Italian, age-old, traditional olive harvest. Help bring in the fall crop of olives at Bella Vista Ranch, sited in the beautiful Texas Hill Country. Spend a couple of hours on an early fall evening among the rows and rows of lovely olive trees. Before you know it, you will be entranced by the rhythmic motion of your hands running over the dusty grey branches, filling your basket to the brim with the 2009 Bella Vista Olive Harvest. Sounds of gentle conversation of your fellow pickers drift through the valley. Ah, the smell of grilling wafts over the tops of the trees-it must be the Cooking Class preparing your meal! Because, yes, your labors will be followed by a sumptuous Italian spread! If picking is not your thing, sign up as a student in our "Olive Harvest Italian Feast". A simple cooking class, focusing on preparing some traditional Rustic Italian cuisine-all outside, in the shadow of the olive groves.

We will also take a quick tour of the "frantoio" and experience an educational tasting of olive oils. Our hosts, the Dougherty and Peters Families will join our feast. Over dinner, Jack Dougherty, the founder of "First Texas Olive Oil Company", will talk to us about the history of olives, the olive harvest and the making of olive oil. Sign up as a "Farm Hand" or a "Chef". Included in your evening is one bottle of Bella Vista estate bottled wine, red or white, which can be consumed with your meal or taken home as a gift for someone. Other bottles may be purchased in the showroom. And as a very special memento of your evening, one bottle of olive oil will be shipped* to you, using the harvest of our evening. This "special release" bottle will be numbered and signed. This is an experience, not to be missed!

*Shipping of the fall harvest usually occurs in late January, early February, when the olive oil is ready for consumption. Bella Vista Ranch is located in Wimberley, Texas, approximately 1 hour from Austin and San Antonio.

Tuscany Comes to the Hill Country!

We are privileged to welcome Chef Sarah Fioroni as our Guest Chef for the evening!

Her family's place, Fattoria Poggio Alloro, is situated in the hills of San Gimignano, Tuscany. 250 acres, filled with vineyards, olive groves, cereal crops, woods, fruit trees, vegetables, saffron, and pastures for the farm's animals. They raise Chianina beef cattle, chickens, rabbits, pigs, and have 35 beehives. They produce their own prosciutto, salami, pasta, and, of course, wine and olive oil. All of which they serve at their restaurant and Bed and Breakfast. Being a guest at Fattoria Poggio Alloro let's you experience being part of an Italian farm family for a few days. It is truly and incredible and memorable experience.

Sarah is a certified Sommelier and also a well-known chef and cooking class instructor. Sarah has made numerous trips to the USA, where she has taught many cooking classes at Central Market cooking schools and at Williams Sonoma. Here in Texas she will be teaching classes again this November at the Central Markets in San Antonio, Austin, and Houston, Dallas and Ft.Worth. For us, she has crafted a custom Tuscan Menu and will wow us with samples of her family's olive oil, honey and wine!

Sarah is an adorable, young, effervescent person who delights everyone she meets. At the farm she is the manager of their ten-room bed and breakfast and restaurant. She is in the process of writing a cookbook in English with lots of wonderful recipes and stories about her family and farm. Her book will be published by Shearer publishing and should be for sale in 2010. We at Onion Creek Kitchens are toying with the idea of taking a group of our foodie students for a visit to Sarah's sometime in the near future.
